Instant Pot Garlic Shallot Coq au Vin Sauce

A longtime favorite in French farmhouse kitchens, homemade coq au vin is quick and easy to prepare when you use your Instant Pot and our savory starter. Created by our Test Kitchen chefs using our fans' all-time favorite recipes, this rustic blend combines hearty red wine, mushrooms, tomatoes and carrots with aromatic shallots, garlic and thyme. For a great meal, just combine the starter with sautéed chicken and pressure cook for 10 minutes.

Garlic & Shallot Coq Au Vin
3 lb. (1.5 kg) bone-in, skin-on chicken thighs
Kosher salt and freshly ground pepper
3 Tbs. vegetable oil
1 jar coq au vin starter
Season the chicken with salt and pepper. In an Instant Pot set to Saute, warm the oil. In batches, sear the chicken thighs, turning occasionally, until browned all over, about 8 minutes per batch. Return all the chicken to the pot and stir in the starter. Lock the lid in place, seal and set to cook at high pressure for 15 minutes. When pressure cooking is complete, let the pressure release naturally for 10 minutes, then quick release the remaining steam. Carefully remove the lid. Using a large spoon, skim the fat from the sauce and serve.
