This starter blends savory beef stock with red wine, Dijon mustard, shallots and spices to create a sauce that complements a range of proteins – from chicken and pork to tofu. Simply mix with a sautéed protein and pressure cook for 10 minutes.

• 3 lb. (1.5kg) boneless, skinless chicken thigh or breasts
• Kosher salt and freshly ground pepper
• 3 Tbs. vegetable oil
• 1 jar starter sauce

Season the chicken with salt and pepper. In an Instant Pot set to Saute, warm the oil. In batches, sear the chicken, turning occasionally, until browned all over, about 8 minutes per batch. Return all the chicken to the pot and stir in the starter. Lock the lid in place, seal and set to cook at high pressure for 10 minutes. When pressure cooking is complete, let the pressure release naturally for 10 minutes, then quick release the remaining steam. Carefully remove the lid. If desired, use two forks to shred the chicken in to bite-size pieces, and serve.
