Use & Care

Receiving instructions

  • The beef Wellingtons are shipped frozen with dry ice. Please take care not to touch the dry ice with bare hands. Freeze the beef Wellingtons upon receipt. Keep frozen, up to 3 months, until ready to bake.


  • Defrost overnight in refrigerator. Position a rack in the upper third of an oven and preheat to 400 F. Place the Beef Wellington on a greased baking sheet. Bake until the pastry is golden brown and a meat thermometer inserted into the center registers 130 - 135 F for medium rare (22 minutes), or 145 F for medium (25 minutes). Let rest for 5 minutes before serving. Appliances vary adjust accordingly.

    Rated 2 out of 5 by from Needs Seasoning I have made my own Beef Wellington and I really didn't want to go through all that work. So, I purchased these from Williams Sonoma. The servings look very nice and the pastry was quite good, but the tenderloin lacked any seasoning and the pate did not have a great deal of flavor. We all ended up adding some sort of sauce to cover the bland flavor. Very disappointed.

    Rated 4 out of 5 by from Absolutely Delicious I bought these for my husband for his birthday and they did not disappoint! Neither of us had tried wellington before and didn't know exactly what to expect. They were delicious! I believe they were missing the mustard and prosciutto used in traditional wellington, and that was fine. These were not lacking in taste and the steaks inside stayed moist. A comment about cooking these would be to check them 1/2 way through the cooking time for your preferred doneness. The timing written on the package was too long for my husband's preferred doneness. Also, the only reason I gave 4 stars instead of 5 is because of the hefty price... Still a great treat!

It might be cheaper to make beef wellington from scratch but the convenience and flavor of these gems ensures I'll be buying them again from Williams-Sonoma.

As a result, the meat is too well done by the time the dough is done. There is also way to little mushroom mixture inside. Each bite is mostly pastry with a bit of meat and almost non-existent mushroom flavor. Not the center piece of Christmas dinner we expected.

Although the texture was different from traditional tenderloins, the meat was tender, well seasoned with the duxelle, and the pastry was flaky and yummy. We baked for 2 minutes less than recommended.
