Rated 5 out of 5 by PASTAGALORE2 from CLAMPING TIP Here in Italy we use a thick piece of cloth (or a piece of cloth that has been folded several times) between the clamp and the table, over and under the table, to protect the table and give more stability. I hope this helps.Date published: 2016-03-11Rated 5 out of 5 by spattan from Store bought pasta -- never again. Received this in the mail a few days ago. Have used it twice and so far it's been great. I have had no issues. Easy to set up and a breeze to use. Easy to clean. Very excited to many years of continued use.Date published: 2016-01-28Rated 5 out of 5 by CookinginWI from Great little gadget Purchased for our teenage chef and she immediately mastered the art of noodles-in fact we have already enjoyed 3 meals because of this little machine. Easy to assemble and use and creates great noodles. Looking forward to many more pasta centered meals!Date published: 2016-01-07Rated 4 out of 5 by BAppetito from Nice machine Pasta machine works very well and easy cleanup. The knob that sets the thickness could be a little smoother but overall a very efficient machine.Date published: 2015-09-08Rated 4 out of 5 by gerene1 from Pasta maker We used it for the first time and thoroughly enjoyed the experience of making our own pasta and it taste so much better than store bought. I would have given the pasta maker 5 stars easily but the one thing that held me back was the clamping system. It clamps down on one side but it really needs to be held down on both sides. I would buy it again no problem but just a design flaw for me.Date published: 2015-05-18Rated 5 out of 5 by Royboy99 from a great device It took a bit of a learning curve, primarily to get a dough recipe that works for us. I finally developed my own . I use two cups of semolina flour, two eggs, two tblsp olive oil and 2 tblsp water. knead by hand, put it in a freezer bag to rest, cut it into about 6 pieces which I roll out with a rolling pin to get them thin enough to feed into the rollers run it through the rollers about four or five times at each setting until I get it to the thickness I want. (After each trip through the rollers I fold it into thirds, hit it enough with the rolling pin to get it back into the rollers, then roll it at 90 degrees to the last pass through. ) When it's thin enough I cut the strip of dough in half and run it through the cutters, then hang the finished pasta over the pins of a wooden pasta rack to dry. My wife and boys love it. If you're clumsy, not good at critical thinking or just plain inept, suck it up and get an automated extrusion-type machine. Your pasta won't be as good, however.Date published: 2015-02-03Rated 5 out of 5 by JoeyJamie from Couldn't be simpler! We've had our eyes on various pasta makers/machines for some time - the Imperia seemed like the best choice based on price, reviews, and reputation. Although we like to cook, we've never attempted fresh pasta before...we were excited. Last night was our first attempt; it worked beautifully. We followed the instructions regarding set-up and cleaning of the machine. I found a recipe for dough online (2 cups of flour, three eggs, 1/4 tsp. salt, and 1 Tbsp. of olive oil mixed together in a food processor...easy!) The dough rolled out very well and we actually felt like we knew what we were doing. I definitely recommend this product and plan to use it frequently. (I like, too, that the red enamel-ish color can only be found at Williams-Sonoma.)Date published: 2014-12-30Rated 3 out of 5 by KCWi from This thing is unweildy. Perhaps I need more practice. The clamp that secures the machine to the counter is wonky. The crank falls out easily. Instructions on assembley weren't helpful.Date published: 2014-10-22
