Our herb-roasted potatoes are a vegan's delight – and a side dish worthy of any holiday feast. Red potato chunks are tossed with rosemary, thyme and garlic, then roasted to crisp, tender perfection. They're covered in a tasty vegan "sour cream" sauce made with cashew butter and apple cider vinegar.
- 3 lb. 3.5 oz. (two trays; serves 8–12 total).

- The side dish ships frozen to arrive chilled. Upon receipt, store in the freezer, where it will keep for up to 6 months.
- Bake from frozen. Preheat oven to 375°F. Remove plastic wrap. Place tray on a sheet pan and bake for 45–55 minutes.
- Red potatoes, cashew butter, canola oil, water, garlic, lemon juice, apple cider vinegar, rosemary, thyme, kosher salt, black pepper.
