- To protect the life of the cookware, use clarified butter or high smoke-point oils such as safflower, corn or refined olive oil.
- Do not use aerosol cooking sprays or extra virgin olive oil; a carbonized buildup will develop over time, causing foods to stick.
- Ideal for gas and electric cooktops (not induction-compatible).
- Oven and broiler safe to 600°F.
- Refrain from using metal utensils on any nonstick surface. Plastic, rubber or wooden utensils are recommended to prolong the life of the pan.
- Dishwasher safe.
- Avoid using steel wool, steel scouring pads or harsh detergents.

Rated 1 out of 5 by Dianimal66 from The stickiest "non-stick" pan on the planet! It was clever of GreenPan to start making their pans in black ceramic. It saves the customer from realizing that the pan has black stains that are impossible to remove, after just a few uses, which was harder to hide on the white background. I literally cannot understand how this company is able to stay in business and claim that they make non-stick pans. It simply isn't true. They don't perform as they should, even with a high-smoke point oil, certain foods fuse to the surface on contact. Apparently the technical term for this is "poor surface tension" meaning food doesn't slide around the pan like it should. Unless you are cooking at extremely low temperatures it is 100% impossible to use this pan without oil, as claimed, and even with oil, certain foods just stick. And once it's stained, you CANNOT get it off by normal cleaning methods. Yes, I thought of buying one of those weird Mr. Clean things but really, why should I? And why don't they recommend it up front instead of this bogus warm soapy water soft sponge nonsense. I told the lady I'm vegan and I only cook veggies and meat subs. She said I would love this set. And at first I did. Easy wipe clean, no food sticking... but then. My husband ( that does eat eggs once in a while) wanted a egg, I put a little oil in the pan, cracked the egg. Everything look ok, till I went to check the edge of the egg. It was like the egg had been welded on !!! It left the whole bottom of the egg stuck to the pan !! And the top was a mess and ever bit that touched the pan welded to it! I gave up and threw the breakfast away. And started hand washing the pan. Although the pan looks cleanish.. there is still a coating change where the egg was. The pan has never cooked the same since!! There are two aspects of "non stick" that are important to me. There first is surface tension while the food is cooking i.e. if an egg will slide when the pan is shaken or if it sticks to the pan. The second is the release of the food i.e. when you scoop or spoon or food, does it stick to the pan making it hard to clean or does it release. This pan has good release but has a high surface tension. It worked great for the first few months. However, lately EVERYTHING sticks to it. We made Chinese on Friday night and the rice stuck. We used canola oil, yet it stuck like glue. We also tried salmon, that stuck and this morning we made scrambled eggs and it was a mess. We had to soak the pan and we still had to scrub it. We couldn't get the egg off the pan. I brought the pan back to WS and they gave me a new one. They said I needed to use oil or butter but I said the reason I bought this was so that I didn't have to use oil or butter.
