When Patti Furey Crane was pregnant with her first child, she craved high-quality, gluten-free treats. Options were few and far between, though, so she decided to make them herself. In 2004, she opened a bakery devoted entirely to gluten-free confections and called it Mariposa, meaning "butterfly" in Spanish, because of her belief in transforming lives through healthy eating. Her classic croissants are light and tender, made from scratch with organic milk, creamy butter and fragrant vanilla. Simply heat until golden brown, and you can now enjoy delicious gluten-free croissants fresh from the oven.

- Use & Care
- The croissants are shipped frozen to arrive chilled. Upon receipt, remove croissants from the shipping container and store them in the freezer, where they will keep for up to 2 months. Alternatively, store the croissants in the refrigerator, where they will keep for up to a week, unopened.
- The croissants arrive fully baked and only need to be reheated. Preheat oven to 350°F. Place croissants on a baking sheet and warm in oven for 4–6 minutes until warm and golden. Alternatively, microwave for 10 seconds to reheat croissants.
- Gluten-free flour blend (organic brown rice flour, tapioca starch, potato starch, organic amaranth flour), organic milk, unsalted butter, eggs, organic unrefined cane sugar, yeast, xanthan gum, sea salt, beet fiber, pure vanilla, ascorbic acid.

While not exactly the extreme flakiness found in premium fresh croissants, as a gluten-free chocolate croissant the flavor is wonderful and the dough is at least equal to the standard run of the mill croissants found in regular stores/bakeries, with a light texture. I froze them when they arrived, and took a 4 set out to defrost in the refrigerator overnight and then heated them in a counter top convection oven at 325 deg F for about 6-7 minutes. Two times on light in the toaster oven and then 15-20 seconds in the microwave. It took me three croissants to figure this out. First one: Once on medium in the toaster oven. It slightly burned it, the inside was still cold and dense and "bready". Second one: Twice on light in the toaster oven. Still cold inside. Microwaved for 20 seconds, inside - hot, light and fluffy. Third one: Thrice on light in the toaster oven. It slightly burned it. Inside still cold. Microwaved briefly, hot, light and fluffy. Couldn't just use microwave, as I wouldn't get the outside crisp. Living in rural area makes it VERY challenging to find products such as these. Although best fresh (where they taste exactly like their wheat flour counterparts), they freeze well and are great reheated with a hot air fryer.
