Unifying function and design, this distinctive Japanese prep knife combines an ergonomic handle with a triple-layered steel blade whose wide shape and razor-sharp edge make it a natural for cutting fresh vegetables and herbs.

- Use & Care
- Always use caution when handling sharp objects.
- Avoid cutting on hard surfaces such as stone, metal or glass.
- It is not advisable to use any knife but a meat cleaver to cut through bone or frozen food, as the blade can be easily damaged.
- Hand-wash with warm water and a mild detergent. Rinse and dry immediately.
- Use the honing steel only when you feel the knife has lost some of its original sharpness, usually no sooner than six months after its first use. As you continue to use your Global knife, it will require more frequent honing. If you need to hone your knife more than once every two weeks, it is time to have it sharpened.
- Sharpen your knife at home using a whetstone or knife sharpener, or have it sharpened by a professional.
- Store knife in a safe place to protect its edge and prevent injury.

For an additional charge of $17.50 per address, we can expedite delivery to most destinations. Orders received by 9:00 p.m., Eastern time, Monday through Thursday will arrive the next business day; orders placed Friday through Sunday will arrive on the following Tuesday.

If within 30 days, you are dissatisfied for any reason, you may return your purchase for a refund of the merchandise value. An original receipt or gift receipt is required for all returns and exchanges. Returns with a gift receipt will be refunded in the form of a Merchandise Credit for the amount indicated on the gift receipt. Returns with original receipt will be refunded in the original form of payment, cash and check refunds over $100 will be issued as a company check (may take 14 business days from time of request).

We cannot accept returns on monogrammed, personalized, special-order items, custom upholstery, food, items shipped direct from the vendor, or on items damaged through normal wear and tear. Final sale items ending in .97 or .99 cannot be returned.

I do a lot of chopping and slicing and it is now the first knife I reach for. I love how Global knives handle. Global knives keep their edge better than my Wustof knives. The 7 1/2" knife has significant size and makes scooping up your chopped and sliced vegetables very efficient. Super sharp. I initially started off with the 8" gyuto (chef) knife from the SAI line and absolutely love both. I could tell from the moment I placed one in my hand that no other knife at W-S felt quite the same. They are balanced perfectly, feel great in the hand, and cut beautifully. I bought the 5 1/2" version, which is actually larger than I thought. I think I would only need the 7 1/2" knife if I were cutting through large butternut squashes or pumpkins on a daily basis. I am a gourmet cook and vegan, therefore I do tons of chopping and slicing. I have a set of very nice Wusthof knives but they can't even compare with this knife. Right off I chopped up sweet potatoes and was amazed at how easily this knife glides through and the little dimples prevent the cut pieces from sticking,which sweet potatoes are very prone to do. I had cut onions, finely diced garlic, chives, carrots and celery and had not even honed the knife yet after all that it easily sliced through somewhat soft Campari tomatoes. The knife is balanced and has some weight to it, which I love. This knife lived up to the hype.Date published: 2014-02-01
