Emile Henry has been crafting artful kitchen ceramics since 1850, when the French company was founded in a small town in Burgundy. Today, it’s still proudly owned and operated by members of the Henry family. The mineral-rich soils of Burgundy are known for creating wines with unique terroir, but they also yield the special local clays used to craft each piece of Emile Henry cookware and bakeware. The high-fired clay withstands extremely high temperatures while distributing and retaining heat gently and evenly. Artisans hand apply the glazes to create vivid color that looks beautiful in the kitchen and at the table.

I use it on the grill for chicken and beef too, it is amazing. The pan keeps the food from drying out but locks in the flavors. I marinate the meat/veggies, add in the order of which takes longer to cook. I don't want to cook our food on stains or baked on food and especially when cooking for guests. We found the steel grill pan and the mesh roaster required too much scrubbing and soaking in another pan. The wilton fish grill pan is very good but not large enough to grill veggies and still looks a little discolored when used on the grill. Which bring us to this fish marinator and grill tray..... I love the fact that it's black and we can easily soak it without putting it into another pan. A little white vinagar and the Maier nonstick brush completes the job when necessary. Works well in the oven, too and is easier to clean with oven use. This pan grills and bakes not just fish nicely but so far chicken, pork and veggies too. The only negatives are that it's heavy and can't go on the stove top.Date published: 2014-07-27
