Bake rustic round loaves to perfection in Emile Henry's covered pan, inspired by vintage French bakeware. The Burgundian clay absorbs, distributes and retains heat evenly, so bread bakes to a golden, crispy crust. Ridges in the base distribute heat across the bottom and prevent sticking. The special domed lid keeps moisture inside for a moist, fluffy interior, while allowing the bread to rise to its full height. The versatile pot is also handy for baking casseroles and meatloaf, roasting poultry and potatoes, and braising meats.

Orders received by 9:00 p.m. ET Monday through Thursday will arrive the next business day; orders placed Friday through Sunday will arrive on the following Tuesday.

I’ve tried both the no-knead and regular kneaded recipes, and both come out perfectly each time. The cover ensures a deliciously crispy crust and a light and fluffy crumb. I unfortunately dropped and broke the lid on my first one (the clay is a lot more fragile when hot than cold) so had to buy a second. I would just be careful removing the lid partway through baking to avoid that happening to you. His recipes call for baking in a 4 quart dutch oven. The Emile Henry pot stands "head and shoulders" above the 4 quart Lodge dutch oven. My bread comes out far nicer with the Emile Henry pot. I became obsessed with "no-knead" bread, and wanted to try it. This pot had many recommendations, so I went for it. I was skeptical. People were raving about the bread it produced. I am so happy to say they were right. From the first loaf to the 15th (so far), this produces consistently great, rustic bread. The crumb is superb, the flavor wonderful. Leftovers make great panzanella, croutons, or breadcrumbs. Follow the recipe that comes with the pot and prepare yourself for fabulous bread. It also makes great potatoes and vegetables. Though it can be used on the stove, even induction, I prefer to use the oven. Wonderful product - I highly recommend it. I have attached pictures of the first loaf of bread I made in it. I am confused about whether I need to preheat the pot before putting the dough in. I have seen videos that say I don’t, but in the product description, it says yes to preheating. Hi Bean, We posed this question to our Bakeware merchant and this is her response: "I prefer preheating my bread pots for 30 minutes at the recipe-stated temperature. When the dough hits a hot pot it will release a burst of steam, and having the moisture in the covered pot while baking helps to create a crisper more golden crust."Date published: 2019-12-13

This and the Cloche work the same way.
