- Ideal for use on any type of cooktop, including induction.
- Oven and broiler safe.
- Hand wash only. Use hot water, and just a few drops of gentle soap if necessary. Do not soak pan.
- Remove any residue with a nonabrasive scouring pad.
- After washing, dry pan and lightly season: Add a few drops of cooking oil to pan and wipe with a paper towel, leaving a thin layer of oil on pan before storing.
- Season pan before first use: Place potato peelings in the pan with about 1 cup of water. Bring to a boil for 15 minutes. Drain the mixture, then rinse the pan. Cover the pan bottom with a coating of frying oil and dry it for a few minutes. Discard oil and wipe the pan with a paper towel.

Typically a carbon steel skillet can go from stovetop to oven. The handle coating on DeBuyer mineral b skillets will melt in temps above 400f. I bought this pan after Cook's Illustrated reviewed carbon steel pans and extolled their many virtues. After removing the protective beeswax coating it was easy to season initially with flaxseed oil. (Check out some of the many videos online; just about any reasonable technique will work.) Use the pan much like a grilling surface: preheat it throughly, oil the food (you can also put oil/butter/etc. in the pan just before cooking), put food in the pan and cook until it easily releases. Then it will slide around like it's on a skating rink. Flip, etc. I just did this with salmon fillets this evening. They had a beuatiful bronze exterior and were a perfect 130F in the middle. I recently renewed my interest in cast iron & the carbon steel pan is similar & requires the same level of care. I don't mind the extra care when it cooks so well, I find myself reaching for it instead of my trusted cast iron skillet. It is seasoning up right nicelly, heats evenly and will be as good as "nonstick" when the seasoning is complete. It has washed up very nicely with very little scrubbing. I later went back and purchased the smaller fry pan and the small Country pan. I love them all. They go from stovetop to the oven, are quite non-stick when you properly care for them and absolutely are my favs to cook with. You need to treat them like you would a cast iron item, clean, dry and oil them, but the small effort is worth it. My go to pans!!!! Plus, they were not made in China!Date published: 2012-12-09
