Featuring high, rounded sides, this traditional French country pan excels at sautéing, simmering, deep-frying and stir-frying. Constructed of 99% iron with no chemicals or coatings added, this pan has a beeswax finish for a naturally stick-resistant surface.

- Use & Care
- Ideal for use on any type of cooktop, including induction.
- Oven and broiler safe.
- Hand wash only. Use hot water, and just a few drops of gentle soap if necessary. Do not soak pan.
- Remove any residue with a nonabrasive scouring pad.
- After washing, dry pan and lightly season: Add a few drops of cooking oil to pan and wipe with a paper towel, leaving a thin layer of oil on pan before storing.
- Season pan before first use: Place potato peelings in the pan with about 1 cup of water. Bring to a boil for 15 minutes. Drain the mixture, then rinse the pan. Cover the pan bottom with a coating of frying oil and dry it for a few minutes. Discard oil and wipe the pan with a paper towel.

It is easy to clean and pretty much non-stick after seasoning it right. I want to buy 12" version for larger quantities but would prefer one with two small pot holder handles than the one with a small and a long handle. This huge steel skillet with the extra handle and beeswax finish looked and sounded intriguing to me. In fact, it is a wonderful skillet and I use it several times a week to cook many different foods - following the same criteria as for cast iron: avoid acetic foods, such as tomatoes and do not leave saucy food in the pan to undo the seasoning. The de Buyer video on YouTube explains care and seasoning in the very visual, multi-lingual way required these days. All other non-stick cookwares do not recommend to use on high-heat. This pan is great for high-heat cooking and best of all it has nonstick quality. Follow the instruction on the booklet that come with the pan before first use and season. The instruction of season pan before first use on WS website is for de Buyer blue steel series.
