It is basically 4 cups of milk and starter. You can set the cook time and once the cook time is finished, the machine switches to "cool" and holds the yogurt until you attend to it. No waking up in the middle of the night to move the yogurt into the fridge. To make geek yogurt, you simply strain the yogurt through a sieve to separate the whey out. I have made several batches, including some with A2 milk for a lactose intolerant friend. She is happily eating yogurt again for the first time in ages. The machine takes up limited counter space and is fairly quiet. After doing quite a bit of research we decided on this machine from Cuisinart. It was a great decision. From the very first batch it has made perfect Greek Yogurt every time. It is so easy to use, quiet and takes up very little counter space. We've been experimenting with each batch and have found that although you don't need to preheat your milk (you can put it in cold and the machine does all the rest) by preheating your milk you do get a slightly thicker creamier yogurt. Either way the yogurt comes out perfect. You can eat it as is right after the cooling is done but for Greek Yogurt you do need to strain it for about 8-10 hours. It's worth the extra time and health benifits. Once strained we transfer the yogurt into 5 oz jars with lids. Then we can add fruit, preserves or flavorings to each portion, to our liking. It is nice to know what ingredients are in our Greek Yogurt now. Does this machine first heat the milk to 185 and then cool it before adding the starter or do you have to heat it first on the stove?Hi julias, Heat milk on the stove to 180°F (some cultures recommend only 160°F, so follow the instructions per the particular culture). For best results (but not essential), keep milk at this temperature for about 20 minutes. Cool milk until a thermometer reads 110°F. Once cooled to 110°F, stir in culture and any other thickening agent into the milk so that it is fully incorporated. Transfer mixture to the yogurt maker and set the appropriate fermentation time.Date published: 2019-06-02
