Pancakes
- 2 cups (240 g) pancake & waffle mix
- 1 egg, lightly beaten
- 4 Tbs. (60 g) unsalted butter, melted
- 3/4 cup cup (185 ml) milk
1. In a large bowl, whisk together the mix, egg, butter and milk until the batter is almost smooth; do not overbeat. Let stand for 5 minutes.
2. Preheat a griddle over medium heat until a few drops of water flicked onto the surface skitter across it. Lightly grease the griddle with vegetable oil or spray with nonstick cooking spray and wipe off the excess.
3. Pour 1/3 cup of the batter onto the griddle for each pancake. Cook until bubbles form on top and the batter is set, 2–3 minutes. Flip the pancakes and cook until golden brown on the other side, approx. 2 minutes more. Keep warm until all the pancakes are cooked. Repeat with the remaining batter, adding more oil to the griddle as needed. Makes six or seven 5" (13 cm) pancakes.
Chocolate Chip Waffles
- 2 cups (240g) pancake & waffle mix

- 6 Tbs. (3/4 stick/90g) unsalted butter, melted
- 3/4 cup (185ml) milk
1. In a large bowl, whisk together the mix, egg, butter and milk until the batter is almost smooth; do not overbeat. Let stand for 5 minutes.
2. Preheat a waffle maker according to the manufacturer's instructions. Pour approx. 1/2 cup of the batter onto the waffle maker and cook according to the manufacturer's instructions. Makes approx. five 7" (18 cm) waffles.
Chocolate Chip Belgian Waffles: Prepare the batter as directed above. Preheat a Belgian waffle maker according to the manufacturer's instructions. Pour a heaping 1/3 cup of the batter into each well of the waffle maker and cook according to the manufacturer's instructions. Makes seven or eight 4 1/2" (11.5 cm) Belgian waffles.
