- Ideal for gas and electric cooktops (not induction compatible).
- Safe for use with metal spatulas, spoons and whisks as well as nylon, silicone, coated or wooden utensils.
- Do not use other types of metal utensils, such as forks or knives.
- Oven safe to 500°F.
- Do not use aerosol cooking sprays; buildup over time will cause foods to stick.
- Allow pan to cool before washing.
- Dishwasher safe.
- Avoid using steel wool, steel scouring pads or harsh detergents.
- Stubborn food residue and stains can be removed with a nylon scrubbing pad and a fine-powdered cleanser.

- Tomato Ham and Fontina Frittata
In a bowl, whisk together the eggs and Parmigiano-Reggiano cheese, and season with salt and pepper. Fold in the fontina cheese; set aside.
In the deep half of a frittata pan over medium heat, warm the 1 Tbs. olive oil. Add the onion and cook, stirring occasionally, until softened, about 7 minutes. Add the ham and cook, stirring occasionally, for 1 minute. Add the egg mixture and cook, using a rubber spatula to lift the cooked edges and allow the uncooked eggs to flow underneath, until the eggs are just beginning to set, 8 to 9 minutes.
In the shallow pan over medium-low heat, warm the 1 tsp. olive oil. Arrange the tomato slices in a single layer on top of the egg mixture. Place the shallow pan upside down on top of the deep pan and flip the frittata into the shallow pan. Cook, covered, until the eggs are set, 6 to 7 minutes. Uncover the pan and gently flip the frittata onto a platter. Let rest for 5 minutes, then garnish with the basil. Cut the frittata into slices and serve. Serves 8.

They're 1/4" thick and heavy without being too heavy. The handle is solid but lightweight and has enough bulk to make it easy to pick up and flip food. Also, the cooking surface is flat (my last "highly recommended" pans did not have a flat cooking surface), and they cook very evenly. The non-stick surface is a bit different from what I normally see in a non-stick pan. You can see it's a durable surface and the surface did it's job. I will still be careful with the finish. Both pans cleaned up easily and are hanging on the pot rack in my kitchen. Since I hang the majority of my pots and pans on a rack I'm particular about cleaning them. I've had them for about 18 months and within 8 weeks of owning them I knew they were problematic. There is a center c shaped burn out spot on all three and the non stick surface sticks. The surface hasn't flaked off as others have experienced but the surface is very dull. My egg whites stick every morning. Ugh. Like many others I suffer through daily because, while they are not the most expensive in the market, I can't afford to replace often so I've suffered through using these waiting for the quality to improve based on recent reviews. Looks like that is not happening. However, less than two years after the purchase (average use of 5-6 times a week), these pans are no longer nonstick. I submitted a request to Calphalon for these to be replaced. In the meantime, I will look for another set. Hopefully, I will get my money's worth this second time around. The first time in more than 30 years of WS purchases that I am sorely disappointed. Especially for the price, and given the assurances of this company that I ADORE - the small and large scratches made me terrifically sad. I made sure that no metal was used. Only my gorgeous WS olivewood. Or my WS silicone spatulas, or other soft tipped WS tools. No scrubbing. Sometimes dishwasher, but usually by hand. The pans were purchased in 2016; by 2018 they look as if they are 10 years old. Small pan has a deep scratch 1" long that cuts through to the white. Largest pan has multiple scratches 2" to 3" long. I concur in other reviews that say Calphalon has not kept up with the technology and I won't be purchasing any more. Let me know when WS is making pans with the gold non stick or ceramic. (Tried to load photos, but couldn't work the technology.) The first set flaked after four months despite careful care, and even though WS exchanged a new set out, that set is now losing the non-stick coating (see pictures) and the finish on the back. These pans have an extremely thin coating of non-stick material, and it will rub off even if you store them on the wall on their own separate hooks so they don't get banged up.
