- Ideal for gas and electric cooktops (not induction compatible).
- Safe for use with metal spatulas, spoons and whisks as well as nylon, silicone, coated or wooden utensils.
- Do not use other types of metal utensils, such as forks or knives.
- Oven safe to 500°F.
- Do not use aerosol cooking sprays; buildup over time will cause foods to stick.
- Allow pan to cool before washing.
- Dishwasher safe.
- Avoid using steel wool, steel scouring pads or harsh detergents.
- Stubborn food residue and stains can be removed with a nylon scrubbing pad and a fine-powdered cleanser.

Orders received by 9:00 p.m., Eastern time, Monday through Thursday will arrive the next business day; orders placed Friday through Sunday will arrive on the following Tuesday.

- Tomato Ham and Fontina Frittata
In a bowl, whisk together the eggs and Parmigiano-Reggiano cheese, and season with salt and pepper. Fold in the fontina cheese; set aside.
In the deep half of a frittata pan over medium heat, warm the 1 Tbs. olive oil. Add the onion and cook, stirring occasionally, until softened, about 7 minutes. Add the ham and cook, stirring occasionally, for 1 minute. Add the egg mixture and cook, using a rubber spatula to lift the cooked edges and allow the uncooked eggs to flow underneath, until the eggs are just beginning to set, 8 to 9 minutes.
In the shallow pan over medium-low heat, warm the 1 tsp. olive oil. Arrange the tomato slices in a single layer on top of the egg mixture. Place the shallow pan upside down on top of the deep pan and flip the frittata into the shallow pan. Cook, covered, until the eggs are set, 6 to 7 minutes. Uncover the pan and gently flip the frittata onto a platter. Let rest for 5 minutes, then garnish with the basil. Cut the frittata into slices and serve. Serves 8.

My old Calphalon pans never flaked... even after years of use. Stuck so bad I couldn't get the egg off, and it left a big brown crust after I scraped the egg out. I'd post a photo but don't think you can do that here. I didn't even try the 10". Am repacking both, and leaving the egg exactly where it sits. Taking back to Williams sonoma store. Bought my first set of fry pans a while back (along with a few other pots from this same product line), and the coating started to come off not too long after. I thought I wasn't caring for it properly (even though I only use silicone cookware, I was placing it in the dishwasher after use - which was supposedly safe to do). So I purchased a second set, and within 4 months the same thing started to happen, even hand-washing it only. Meanwhile, my All-Clad non-stick set that is now a few years old remains flawless. I will be putting all my Calphalon pots and pans in the trash and sticking with All-Clad.
