- Ideal for gas and electric cooktops (not induction compatible).
- Safe for use with metal spatulas, spoons and whisks as well as nylon, silicone, coated or wooden utensils.
- Do not use other types of metal utensils, such as forks or knives.
- Oven safe to 500°F.
- Do not use aerosol cooking sprays; buildup over time will cause food to stick.
- Allow pan to cool before washing.
- Dishwasher safe.
- Avoid using steel wool, steel scouring pads or harsh detergents.
- Stubborn food residue and stains can be removed with a nylon scrubbing pad and a fine-powdered cleanser.

- Broccoli Rabe with Garlic Recipe
In a nonstick fry pan over medium-high heat, warm the olive oil. Add the garlic and cook, stirring constantly, until just golden, about 1 minute. Transfer to a small plate.
Add one-third of the broccoli rabe to the pan and cook, stirring occasionally and adding the rest after the first batch begins to wilt. Season with salt and pepper and stir in the red pepper flakes. Cook for 1 to 2 minutes, then add the water. Cover and cook until the broccoli rabe is crisp-tender, about 5 minutes. Transfer to a serving bowl, top with the sliced garlic and serve immediately. Serves 4.

When food/liquid is place in the pan and try to toss or move from stove to oven the handle digs into my hand-in particular near the end of the handle. If try to place my hand further down the handle it is very warm.The performance of the pan itself is as described. We have had this set for four years now and use one pan or the other several times a week. They never fail. Decent browning, even heating and cooking and simple cleanup. And the surface has held up beautifully, even with the occasional use of metal utensils. We never cut anything in the pan, of course. Whatever pan you use, you won't do it or your knives any favors doing that. But stirring, scraping up browned bits and such, no problem. I was looking for an omelette pan and this set was sold to me as a good value and dishwash safe. Either they're not really dishwash safe or they're not made well. Less than 5 years, the fry pan has lost a lot of the non stick coating especially along the edge and somehow the interior has chipped away despite our only using wood and silicon.
