- Unit should remain upright at all times; if turned on its side or upside down for storage, it will need to be placed in an upright position for 24 hours prior to using.

- The Best Vanilla Ice Cream Recipe
In a heavy-bottomed saucepan, combine the milk, cream and 1/4 cup of the sugar. With the tip of a knife, scrape the seeds from the vanilla beans into the pan, then toss the pods into the pan. Place over medium heat and bring just to a simmer, stirring to dissolve the sugar. Remove from the heat and let steep for 20 minutes.
Meanwhile, in a large bowl, vigorously whisk together the egg yolks, salt and the remaining 1/2 cup sugar until the mixture falls in a thick, wide ribbon when the whisk is lifted. Remove the vanilla pods from the milk mixture and reheat to a bare simmer. Slowly add the milk mixture to the yolk mixture while whisking constantly. Pour the custard back into the pan and cook gently over medium-low heat, stirring often with a wooden spoon, until thickened enough to coat the spoon, about 3 minutes. Draw a finger across the spoon. The custard is ready if it does not immediately bleed back together. Strain through a fine-mesh sieve into a clean storage container, let cool to room temperature, then cover and refrigerate overnight.
Pour the chilled custard into an ice cream maker and freeze according to the manufacturer’s instructions. Transfer to a tightly covered container and freeze for at least 6 hours before serving. Makes 1 1/2 quarts.

Rated 1 out of 5 by jccwc from Performs same as cheaper model, save up for Lello I've owned this machine for approximately 3 years so I've tried it many times. Getting your ice cream out of the mixing bowl is a pain because there's a non removable post in the middle of the bowl so scooping out the ice cream is difficult. Even the firmest setting doesn't make ready to eat ice cream as it's motor can't churn past very soft ice cream. It takes 50 minutes for a mushy consistency that still needs to be refrigerated. The dasher doesn't scrape down the sides well so a layer forms on the sides not allowing the middle to freeze as quickly creating ice crystals (rough texture of ice cream). The cool down feature isn't great. Putting the cooked custard base in an ice bath then the refrigerator works better. The mixing bowl is very narrow, and I'm unsure from what type of metal it is constructed, maybe aluminum. It does have a nice tone to tell you know when to put in add-ins, and when it's done. Mine is going to be sold at a yard sale. I saved up and bought a Lello which is quiet, easy to remove ice cream, easy to clean, all stainless steel, and makes ice cream in 20 minutes. Other people have said it is bulky but I have no problem moving it around. The pre-cool option is a real help. There are many options on this machine so you really can make any type of frozen product. One of the features that I like a lot is the choice of music that alerts you that your product is done. If you cannot attend to it immediately it keeps the ice cream cold for another three hours! How great is that? I purchased two more Brevilles as gifts. I have to say that Williams-Sonoma had a wonderful sale that allowed me to do this. I have been using an old Delonghi machine for many, many years... when it started to fail, I began to search for a new one. After a lot of research, I decided on the Smart Scoop. All I can say is "Wow!" What a difference! One of the key benefits is the hardness setting. The ice cream from my old machine was always like soft serve. Ice cream from the Smart Scoop is much harder - thick and creamy - without extra time in the freezer. Also, note that I make only vegan ice cream - and it comes out great. I have been making a batch a day! I can't wait to keep trying new recipes! If anyone has questions about making dairy-free delights, I'm happy to answer them. The ice cream that I've been making with the Smart Scoop is better than any I have ever bought in the store (and I have tried every vegan brand).
