Dried Fruit Granola Bar Recipe

Have all the ingredients at room temperature.

Preheat an oven to 350ºF. Grease a quarter sheet pan, line with parchment paper and grease the top of the parchment.

In a large bowl, whisk together the flour, baking soda and salt. Set aside.

In the bowl of an electric mixer fitted with the flat beater, beat the butter on medium speed until creamy, about 2 minutes. Reduce the speed to medium-low, add the brown sugar and granulated sugar and beat for 30 seconds, then increase the speed to medium and beat for 2 minutes. Reduce the speed to low, add the egg and beat until incorporated, about 1 minute. Increase the speed to medium-low, add the flour mixture and beat until just incorporated, about 1 minute. Add the granola, dried apples and raisins and beat until just combined. Press the mixture evenly into the prepared pan.

Bake until a toothpick inserted into the center of the bars comes out clean, about 25 minutes. Let the bars cool completely in the pan, then turn them out onto a wire rack, remove the parchment paper and turn the bars right side up onto another rack.

In a bowl, stir together the confectioners’ sugar and milk. Add the peanut butter and stir until smooth. Drizzle lightly over the bars and let stand until the mixture sets up, about 30 minutes. Cut in half crosswise, then cut each half crosswise into nine bars, each 1 inch wide. Makes 18 granola bars.

  • Rated 5 out of 5 by from Daily used appliance This is one of my most used kitchen appliances! Have owned it for 3 years. I use it for most of our baking, reheating and toasting for the 2 of us. When we have larger gatherings it serves as a second oven or warmer. The outside gets hot, use caution, but I use it to warm plates or keep food warm. Doesn't take long to preheat. Lower electric use than using a whole oven. Attractive, functional and easy to clean. I love the timer setting that turns off the oven. Great safety feature and prevents forgetting food in the oven. The light inside is helpful.

Rated 5 out of 5 by from Kitchen workhorse We’ve had this oven over 5 years and use it daily. We cook small pizzas, toast, heat up leftovers, bake pies and small casseroles, a few cookies for a snack . . . just about anything that will fit in it. We don’t have the light: that would be a great addition. Takes up a lot of room on the counter. So important to us we planned a spot for it in our new house! The outside does get hot! An old marble cutting board on top lets me store things there. Controls can be annoying - - lots of fiddling, but all in all, we love it.

Rated 5 out of 5 by from Love I have had mine for 5 plus years ..i use it instead of my oven most times..pretty much everyday!!!..bought one for both of my sisters for Xmas gifts and they love them too. I’m considering buying the new one with the air fryer but am almost afraid to give this one up. Too bad other reviews say it did not last ..mine is still going strong like the first day I bought it:)

Rated 1 out of 5 by from Not made to last I owned this product for almost 1 1/2 years and used it about 2 to 3 times a week. I took very good care of it and it looks nearly as good as the day it was purchased. I went to use it one day and it simply quit working. Considering the cost of this thing, I was highly disappointed and would not recommend it to anyone. I always left it unplugged when not in use, so I really don't appreciate the thing quitting on me.

Rated 1 out of 5 by from Paid too much I bought the Breville Smart Oven Plus in May 2016 and it stopped working after 18 months. Very disappointed in the reliability of this product for I paid too much

Rated 3 out of 5 by from Excellent until it's not We've had this oven for about 5+ years and use it a few times a week. It's excellent for all sorts of tasks from baking cookies to roasting meats to toasting bagels and reheating food BUT it has started to fail. It looks like it's toasting but the heating elements aren't working. This happens intermittently so it's not completely dead but it is completely unreliable now. This an expensive appliance so I expect it's life with light to moderate use to be longer. It's so easy to use I'm tempted to replace it with another one but don't want to be spending this amount of money every 5 years.

Rated 3 out of 5 by from So perfect, EXCEPT... That one downside of this oven is a big deal to me, so that’s why I’m taking off 2 stars for it. Here it is: it shuts off after the baking time is up. You may think that’s not a big deal but it is. Let’s say you’re baking a cake and the time is 20-25 minutes. You set it for 20 and check to see if it needs five more. Nope. Oven shuts off and you have to turn it back on. Let’s say you stepped out of the room and you didn’t hear the 2 second beep that went off. Too bad. Your oven is off and now it may be ruined. My cuisinart that has been a workhorse for 10 years doesn’t shut off and the timer continues to beep until you shut it off. This is a big enough deal for me to return this oven, but I bought it at the outlet in Las Vegas and I’d have to return it there. Other than this, it cooks beautifully and is very attractive.

Rated 3 out of 5 by from good but not built to last I bought one of these several year ago from Williams Sonoma, thinking that, as a single person who doesn't cook a great deal, this might fit into my lifestyle. I was largely pleased with it. It seems to be able to do everything that Breville claims it can do. However, for the sake of other potential purchasers, I think I should point out that it basically died recently (no longer heats), after approximately 3 years of very light use. I'm now looking at the Wolf toaster oven, which, while more expensive, is hopefully more durable.
