Does everything in 6 minutes. The steaming function works great. And the sauté, reduce, and sear functions work phenomenal. But this pot.... I don't see how I lived without it! Unlike my other pressure-cooker, which I had to constantly monitor, and release steam from, which required my constant presence during the entire cooking procedure, with this pot, I can actually set it, and YES- walk away! And I LOVE how a slow-cooker can make meat so fall-off-the-bone tender, but not how I always end up with a useless thin sauce. Same goes for soups and stews that can end up too watery. This is a pot for even the most challenged cook. It's basically idiot-proof. You press a button to select a feature, like "Pressure Cook." Then you adjust the button for options like "rice" "meat," etc. Then you walk away...and come back to a wonderfully-cooked meal. If your dish is watery, simply press "Reduce" and the pot with heat up to reduce the liquid. For dishes that require browning or sauteeing, simply press "saute." No need to dirty another pan. I use this pot more than any other appliance in my kitchen now. Saves energy, too, and doesn't heat up the entire kitchen. Easy to clean. I just donated my $200 rice-cooker, my $300 pressure-cooker, and my $150 slow-cooker. Both the short ribs and the spaghetti sauce turned out well, but both times the cooker was finicky and required resetting the lid. It had a tendency to get hot, but took quite a while to come to pressure. Both of those meals ended up being served considerably later than anticipated. In an effort to give it one more shot, I set out to make chicken stock on the side while making dinner. After more than fifteen minutes of appearing to not come to pressure, it began to auto-release from a suddenly detected ~9 psi to nothing. I ended up dumping the stock into my dutch oven and moving it to the stove. Other notes: I found the controls on the machine to be well laid out and extremely intuitive. I found it a little bit strange that the pot itself didn't have a completely flat bottom. When sautéing for the short ribs and tomato sauce, I noticed the oil ran from the center to the edges of the pot. It's possible I just got some kind of a dud unit, but it's not worth it to me to try to make this work. I loved the idea of all the different functions. However, the pressure cooker takes entirely too long to reach full pressure. I have been using the Cuisinart Electric Pressure cooker for years and it comes to full high pressure in half the time. I called Breville support and was told it could take up to 45 minutes to come to high pressure. If it takes that long to come to pressure -,it defeats the idea of cooking quickly in a pressure cooker. Very excited about programmable release on this model. Sadly, never saw it in action as the first time I used it, it died after reaching pressure. Completely dead.
