This beautiful piece is the ultimate carving board for roast meats and poultry. It's crafted of solid North American hard rock maple, with extra-deep wells to catch flavorful juices. - Use & Care
- Board should be seasoned with a food-grade mineral oil before first use.
- To season the board properly, warm the mineral oil slightly and apply it in the direction of the wood grain using a clean, dry cloth. Allow the oil to soak in and repeat with another application. Allow the board to dry and wipe off any excess oil.
- Hand-wash with hot, soapy water. Dry thoroughly.
- Do not soak or submerge board in water.
- Occasionally rub with a food-safe mineral oil to keep wood from drying out.
- To sanitize, wash the board with a solution of one part vinegar to five parts water.
- Remove odors by rubbing the board with kosher or table salt and half a lemon. Let sit for 2 to 3 minutes then wipe clean with a damp cloth. Remove excess moisture with a clean paper towel and stand the board on end to air dry.
- Store in a dry area away from extreme temperatures.

I have had no problems at all in the four years I’ve owned this board. The biggest problem I have is flipping it over as it is very heavy and I’m pushing seventy. However, I take good care of it, sanding it occasionally and washing and drying it daily. As an owner of lots of Global knives, I wanted something which would not dull them and also to protect my granite counters. I use both almost every time I cook. This board is used for slicing meat, chopping pork shoulders into BBQ and any time I am working with something juicy. The side wells keep the juice off my counter and the slot makes pouring off the juice easy. You have to oil these blocks and occasionally flip them over. Outstanding product. Heavy. Made to last. We'd purchased less expensive carving boards before at other retailers and had them crack very quickly, just from regular light washing. I also got food-grade mineral oil and a beeswax-based protectant. We oiled the wood several times and did several coats of protectant, and have been very careful when washing it not to get it too wet, and to dry it immediately. Unfortunately, after only a couple of weeks of use, it's cracking. It is a show piece and well constructed. You must either have a very large counter to keep it out or large storage. Not sure why the other reviewers were surprised at the size 24x18 is 24x18 and that size board is very heavy since it is solid maple. People do comment on the size of the board because it is big. That said, I purchased with the intention of using it for big meals (Thanksgiving turkey, large gatherings etc) because it holds a lot of food. You do need to follow the instructions to oil periodically, but that has nothing to do with how the product is made, but the fact that you are purchasing solid maple. My board has not split and looks as good as the day I first purchased it. I use it 4-5 times a year and store it the rest of the year. Also, because of the size it is difficult to clean.
