I had read quite a bit on various Sous Vide immersion units and, after comparing various models, decided that the Anova 900 watt was the right choice for me. It is bigger than at least one popular brand, and smaller than another. I liked the fact that you can control it either manually or through an iOS or Android device (at least one brand does not have any manual control). I also liked the fact that it has a clamp and does not rely on sitting on the bottom of whatever vessel you are using. It is very quiet. If you use only the minimal amount of water it does get a bit noisier, but even then, I would not classify it as "noisy:" you just hear the water swirling a bit more as it will then "slosh" a bit rather than more-or-less silently swirl in the vessel. And actually, it getting a bit louder as the the minimal water level is approached is a good idea - some feedback that you are nearing that minimum level and more water is needed. The amount of time it takes to heat to temp depends in large part on the temperature of the water you start with. If you start with hot water, it will, obviously, take less time to get to your desired cooking temp. I have not had to take it apart to clean it - I don't expect to have to do that unless I have a bag failure and food gets into the cooking water. The normal "cleaning" is nothing more than wiping it with a towel and letting it air dry. I store it on the side of a cabinet, laying down, clamp-side-up. Easy to get to, fun to use, and really wonderful results. It is truly a revolutionary way to cook. Proteins and most vegetables really shine when cooked at optimal temperature for taste and texture and finished simply for appearance and crunch. Not sure I understand the complaint about noise. It's the quietest kitchen appliance I own except for my gas range. My gas stove tops are louder. Why do I say "Half" of what a home cook needs? Because typically a meat product will cook at about 125 to 130 F depending (chicken a bit higher, thin white fish lower) while vegetables tend to need mush higher temps, around 180 depending. If you want to sous vide both (and you do) a second unit is a real plus. I've had zero Bluetooth issues, and I don't have WiFi on mine (mine is version 2, while WiFi is version 3). Bluetooth is very useful, since it acts as a controller that is easier than using the spin wheel on the device. Not sure what WiFi would add. About cleaning: I have regular city water and haven't had any issues with scaling or crud buildup. I use my devices at least 4 times a week. Both of mine (and the one my brother got for Christmas) work without hitches. My experience may be dumb luck, but three units with over 18 months combined usage without a failure seems like more than luck.Date published: 2017-04-21Rated 5 out of 5 by MrsWhit from A great tool to add to your cooking arsenal I have two of these, and they both work flawlessly. Sous vide is amazing for proteins- including the BEST Thanksgiving Turkey and Smokerless Brisket- as well as pretty much all steaks. Cooking sous vide in mason jars is an awesome technique-amazing creme brulee, and it held a quart of bernaise for hours without any separation. Truly adds capacity in the kitchen. We use polycarbonate tanks and tin foil/plastic wrap to keep heat in. Minor learning curve, which would have been shortened considerably if I had the ability (excuse?) to buy a pro vacuum packer that can handle liquids. Because things FLOAT, and this will make you crazy, I advise you save yourself trouble and buy 2 things 1) a food savr vacuum packer for lower liquid items and 2) chimichanga fryer baskets for higher liquid items. Just stick the bag in the basket and there's no floating, just trouble-free cooking! Bags- I have never had any breaks with ziploc or food savr even cooking more than 24 hours.Date published: 2017-04-21Rated 1 out of 5 by girlcola from Great idea; poor execution I have owned this unit for about a year and a half now, and have had nothing but trouble with it. The bracket broke about 6 months into it (replaced by warranty), despite light use, the wifi and bluetooth connection has never worked right. There are issues with getting the fan at the bottom to correctly fit into the opening at the bottom of the metal cylinder. Also, for pieces that are supposedly designed to be submerged under water, they have too many nooks and crannies that make it difficult to clean out mineral deposits. And now, as a last straw, it's started beeping in the middle of cooking for no reason at all (and yes, I checked water levels). I actually have two of them and my daughters take turns borrowing the extra one. I've had it for one year and have used it regularly. Makes meat easy and perfect EVERY time I use it. Just sous vide and then sear and serve perfect protein! Perfect when entertaining. You don't have to babysit your protein and can enjoy company. when you're ready to eat, just sear and serve! Someone said it was noisy. Not at all! Like on a scale of 1 to 10 it's a 1. Seriously don't get that comment. In love with Sous Viding. Is that a word? LOL.
