- Sauce pots feature five-ply Copper Core construction of securely bonded metals: a thick, extremely heat-responsive copper core sandwiched between two layers of highly conductive aluminum with an easy-clean stainless-steel exterior and interior that won't react with foods.

- Chef Kellers Scrambled Eggs Recipe
In a small bowl, beat the eggs with the salt until they are homogenous. Heat a 2-quart (2-l) saucier over medium-low heat and add the butter. When the butter has melted, strain the beaten eggs through a sieve into the pan. Cook, continually whisking the eggs, until they thicken yet are still very creamy and not completely set. Whisk in the crème fraîche and cook for a few seconds longer. Spoon the eggs onto warm serving plates and serve immediately. Serves 2.

They said it from normal use and is not covered the lifetime warranty. The supervisor claims cooking with salt can cause the pans to pit. I always boil the water before adding salt. I gave away my factory seconds All-Clad pans and a complete set of Calphalon cookware to family and friends. They looked brand new with no pitting. I’m a protectionist in all that I do. The weight, shape, size, and versatility of this cookware is fantastic. Everything stacks nicely to save space in smaller cabinets. Even though it's stainless, coming from someone who has only ever cooked on non-stick, I haven't had any issues with anything sticking. Read the instructions, and if needed, watch some videos online with tips and tricks. Essentially, lower heat, room temperature meats, and some oil or butter. Cleaning these is a bit more difficult than non-stick cookware (perhaps the only con), but using something like Barkeeper's Friend which the company recommends in the booklet, seems to do wonders. Because the exterior is brushed stainless and not shiny, it's totally safe to use both inside and out with a gentle cleaning sponge. In terms of actually cooking on this cookware, my food has never tasted better. Chicken cooks more evenly. Sauces pick up more flavor from the pan. The flared edges make it simple to, for example, pour stock from a smaller pot into a larger one to make risotto. The lids are interesting and take some getting used to, but they are very practical and I'm surprised more sets haven't transitioned to this style of lid. Only 1 downside is re-learning how to cook on Non-stick S.S. read the instructions!! I finally did after burning my eggs! Once I watch the videos and read the instructions, wow, what a heart experience. Story time!!! I put some eggs on the boil (love hard boiled eggs). I left the house for 3 hours (yes, I'm stupid). I was at the store and I remembered the eggs were cooking. I panicked. By the time I got home, my house was full of smoke, the 3 qt saucepan was full of carbon that once was eggs. The eggs had exploded all over my stove, ceiling. I let the pan cool. Called All-Clad and they walked me thru cleaning my pan. And today that pan still looks and works great!! My wife produces approximately a ton of food from her garden per year and has a passion for good cooking, flavors and food. She studied for over a year and came to the sensible conclusion that buying pans makes more sense than buying lids. Converting to stainless was easy - follow directions. Medium to low heat cooks anything at normal temps and usual times. Short soak in hot water, light scrub with a Dobie and BKF. Eggs, really? A shot of coconut oil or olive oil and wait till the egg is ready to flip. I've even cooked eggs in the frying pan without sticking and I'm a stoopid guy, come on people! The lids. Outstanding. The handles are longer than they should be, the 15" is pointless. Do they warp, no, follow directions. Do they drip all over? Yeah the first time you use them, but when you figure out how to 'roll' them over the pan they WORK! My favorite part about this TK All-Clad set is Thomas Keller really thought about the uses for each piece. Each has different layers of material in the construction depending on the use of the pot or pan. I thought I would prefer the shiny exterior to the matte finish but after receiving them, I really do like the matte finish. The flat covers are different, and I like the way they work. Easy to store and clean, too. Best of all, the pots nest saving cabinet room. I love the set!Date published: 2015-09-01

Should the universal lids sit flat to the pans? I just received my set in the mail, and noticed the lids are flat to the pan near the handle of the lid (presumably because the weight is in the handle) while slightly gaped on the opposite site.Hi lulutalulu - Yes, the lids should sit flat.
