- Sweet and Sour Panfried Sole Recipe
Make the sauce
In a small saucepan over medium heat, combine the water, vinegar, soy sauce, ketchup, sesame oil, sugar and cornstarch. Bring to a simmer and cook, stirring occasionally, until the sauce thickens, about 1 minute. Keep warm.
Prepare the fish
In a shallow bowl, lightly beat the egg. Spread the flour and panko on 2 separate plates. Season the flour with a pinch each of salt and pepper.
Just before frying, season the sole fillets with salt on both sides. Dip them first in the flour, then in the egg and finally in the panko, coating evenly each time and pressing the panko with your fingertips so it adheres.
Panfry the fish
Warm a large nonstick fry pan over high heat until just hot and add the corn oil. Add the fish and fry, turning once, until golden brown, 3 to 4 minutes on each side. Transfer the fillets to paper towels to drain briefly, then serve with the sauce. Serves 4.

Rated 3 out of 5 by PairDale Mom from Lovely pans that do not last I bought this set of pans and loved them for several months. But just last week I noticed that the larger of the pans is not holding up. The non-stick is damaged, but I am always very careful to only use rubber or wood spoons. Such a disappointment for a brand like this. Stick with the Cephalon, which is what I just purchased as a replacement.Date published: 2018-11-30Rated 5 out of 5 by MVSysPr from All-Clad NS1 Induction Fry Pans 5 stars all around We have used these for a few months now. The heating is even with no hot spots. Cleaning up is a breeze as the food does not stick on the pan even when left overnight. These are now our go-to item for the stove top.Date published: 2018-11-23Rated 5 out of 5 by Abby65 from Great pans! I've had theses pans for about two months now and I love them! Hand wash them and be careful not to toss things on top of them in the sink or storage area that would damage the surface. Very heavy and exactly what i needed. I plan to buy two more sets for my daughters!Date published: 2018-08-26Rated 1 out of 5 by Kgtexan from Horrible for induction cooking These pans should not be advertised as induction pans. I’ve followed all recommendations as to matching pan to burner size and the only way to use the pan is to turn the burner all the way up & then you may get low heat in the pan. The bottom of the pan has grooves in it which probably explains it. I’ve cooked on induction for years & these pans are just flat out awful. Besides that, the handles are terribly uncomfortable, digging into your hands. Definitely wasted my money on these. Do not buy!!Date published: 2018-06-20Rated 1 out of 5 by aretephora from surface does not hold up; All Cad refuses warranty Purchased a year to a year and half ago. The surface started peeling up within a few months despite following all manufacturers instructions. I only ever used wood utensils and hand-washed it. All Clad has refused to honor their lifetime warranty. A complete waste of money. I suggest you go for different company.Date published: 2018-04-24Rated 2 out of 5 by Griffindore from Disappointed These pans did not last long before the nonstick started chipping away to the point of tossing them. These pans shouldn’t be in the AllClad family as the quality is poor. I will go back to Calphalon.Date published: 2018-04-15Rated 1 out of 5 by Ron in Phoenix from Surface does not hold up I purchased a 13 piece set 2 years ago. WS replaced many at the 1 year mark and now again the surface is chiping off. I only use silicon tools and stack with pads. Stay away at all costs.Date published: 2018-03-05Rated 1 out of 5 by Chrissy from Poor choice for induction cooktops I was excited to receive these pans form my son for Christmas. I currently have all All-Clad cookware and can honestly say, to market these as induction pans is FALSE. I have to put the induction burner to “H” (High) to get a low temp reading on my pans - plus they cook unevenly. Worst thing that All-Clad and Williams-Sonoma has marketed. Wish I could return them for the Teflon variety.Date published: 2018-02-04
