- Ideal for use with all cooktops, including induction.
- For optimum results, use the 8" fry pan on a burner no larger than 6" in diameter; the pan may be used on a larger burner but induction compatibility may be affected.
- Safe for use with metal spatulas, spoons and whisks as well as nylon, silicone, coated or wooden utensils.
- Do not use other types of metal utensils, such as forks or knives.
- Oven safe to 500°F.
- Do not use aerosol cooking sprays; buildup over time will cause foods to stick.
- Allow pans to cool before washing.
- Dishwasher safe.
- Avoid using steel wool, steel scouring pads or harsh detergents.
- Stubborn food residue and stains can be removed with a nylon scrubbing pad and a fine-powdered cleanser.

- Sweet and Sour Panfried Sole Recipe
Make the sauce
In a small saucepan over medium heat, combine the water, vinegar, soy sauce, ketchup, sesame oil, sugar and cornstarch. Bring to a simmer and cook, stirring occasionally, until the sauce thickens, about 1 minute. Keep warm.
Prepare the fish
In a shallow bowl, lightly beat the egg. Spread the flour and panko on 2 separate plates. Season the flour with a pinch each of salt and pepper.
Just before frying, season the sole fillets with salt on both sides. Dip them first in the flour, then in the egg and finally in the panko, coating evenly each time and pressing the panko with your fingertips so it adheres.
Panfry the fish
Warm a large nonstick fry pan over high heat until just hot and add the corn oil. Add the fish and fry, turning once, until golden brown, 3 to 4 minutes on each side. Transfer the fillets to paper towels to drain briefly, then serve with the sauce. Serves 4.

Don't listen to those negative reviews, just follow few simple steps to preserve them, and they will last you for a long time: - HAND WASH THEM; instruction says DISHWASHER SAFE, dishwasher uses really high heat which is not good for nonstick pans; - NEVER USE NONSTICK COOKING SPRAY, it will ruin the nonstick surface and everything will stick to the surface; - USE LOW HEAT, high heat isn't good for nonstick pans and shortens the lifespan of the pan; - STORE THEM WITH PAPER PLATES BETWEEN PANS, doing this ensures no scratches are developed from stacking pans all the time. Very simple, but not everyone follows this, therefore, you see negative reviews here. Worked great until recently when the larger pan started heating unevenly. The bottom is warped and since induction requires contact the pan is worthless. Pan has only received normal use never abused. Maybe cooled in the sink, but all clad needs to warn us about this. We use only Olive Wood implements on our 4 All-Clad non-stick pans and store them stacked between cushioned circles to keep them from touching each other. We noticed on the 10" pan that tiny whorls were developing on the surface and returned it to All-Clad for review. We were told that it was caused by a metal implement - no way. I had to give up my non-stick pans, which were Calphalon. I went into WS, spoke with a fantastic saleswoman, explained my concerns, she assured me I could return them if there was a problem. We have had these pans for a year now and although the nonstick is still working pretty well, there are a few scratches and pits that have developed in the larger pan. We could understand that if we used metal utensils in it, however, we never have, always plastic or rubber spatulas, never put in the dishwasher, and stored with a silicone mat inside to keep other pans from scratching it. I agree with other reviewers, as well, regarding the handle. It's very difficult to get a good grip on it. A bit disappointed in All Clad.
