Sweet Potato Wedges with Avocado Dipping Sauce

Two nutritional powerhouses—sweet potatoes and avocado—join forces in this healthful and delicious side dish that also makes a game-day great snack. Using the air fry function of a Breville Smart Oven Air will ensure that the sweet potatoes are satisfyingly crisp on the outside and tender on the inside, but you can also cook the potatoes on a baking sheet in a standard 425°F (220°C) oven. They won’t be as crisp, but they will still be delicious.

Set a Breville Smart Oven Air to “Airfry” and preheat to 400°F (200°C).

In a large bowl, toss together the sweet potatoes, olive oil, turmeric seasoning and a large pinch of sea salt. Spread the sweet potatoes in a single layer in a mesh basket. Cook until tender and golden brown, 20 to 25 minutes.

Meanwhile, prepare the avocado dipping sauce: In a food processor, combine the avocado, garlic, basil, chives and tarragon. Pulse to combine and finely chop the basil. With the processor running, slowly add the lemon juice, olive oil and up to 1/4 cup (2 fl. oz./60 ml) warm water and process until the desired consistency is reached. Season to taste with kosher salt and pepper. Transfer the dipping sauce to a bowl.

Transfer the sweet potatoes to a serving platter and serve the avocado dipping sauce alongside. Serves 4.
