Directions

To make the waffles, in a large bowl, whisk together the mix, egg, butter and milk until the batter is blended but some small lumps remain; do not overbeat. Let stand for 10 minutes.

Meanwhile, preheat a waffle maker according to the manufacturer’s instructions.

Pour about 1/2 cup (125 ml) of the batter onto the waffle maker and cook according to the manufacturer’s instructions. Repeat with the remaining batter, keeping the waffles warm as they are made.

While the waffles are cooking, in a nonstick fry pan over medium-high heat, melt the butter. Add the sugar and cinnamon and cook, stirring frequently, until the sugar has melted, 30 to 60 seconds. Add the apples and cook, stirring frequently, until tender and lightly browned in spots, about 10 minutes. Stir in the lemon juice.

To serve, divide the waffles among 4 plates and top with butter as desired. Divide the apple mixture evenly among the waffles. Drizzle with maple syrup and serve immediately. Serves 4.
