Microwave Fudge Cake
If you’ve got a microwave, it’s a snap to prepare our fudgy mini cake. Give it your signature touch with whatever mix-ins and toppings you please. We’ve included some suggestions but add whatever you love!
Ingredients
- 3 Tbs. unsalted butter (you can use neutral oil but butter works best)
- 1/4 cup (2 oz./60 g) sugar
- 3 Tbs. all-purpose flour
- 2 Tbs. cocoa powder
- 3 Tbs. milk (you can use plant-based milk but dairy works best)
- 1 tsp. vanilla extract
- Pinch of salt
- Mix-ins, such as chocolate chips, mini marshmallows, jam, Nutella, peanut butter and/or crushed Oreo cookies.
- Toppings, such as whipped cream, ice cream, caramel, fudge sauce and/or berries
Directions
In a microwave-safe ramekin, large mug or small bowl, melt the butter. Stir in the sugar, flour, cocoa powder, milk, vanilla and salt until smooth, then stir in the mix-ins of your choice. Microwave in 30-second increments until the cake is puffed up and mostly cooked through, 30 to 90 seconds. Add the toppings of your choice and serve immediately. Serves 1.
