Cooking the cauliflower in a smoking-hot pan until well browned elicits a natural sweetness. This dark, caramel-like flavor is enhanced by the honey-based glaze and punched up with smoky paprika, spicy chili flakes and tart fresh lemon juice.

Ingredients:

  • 3 Tbs. extra-virgin olive oil
  • 2 Tbs. unsalted butter
  • 1 large cauliflower, about 3 lb., cut into 1-inch florets
  • Sea salt, to taste
  • 1 shallot, minced
  • 1/4 tsp. red pepper flakes
  • 1/2 tsp. smoked sweet paprika
  • 2 Tbs. honey
  • 2 Tbs. water
  • 1/2 lemon
  • Freshly ground black pepper, to taste

Directions:

In a large fry pan over medium heat, warm 2 Tbs. of the olive oil and melt the butter. Add the cauliflower florets, sprinkle with a generous pinch of salt and toss gently to coat the florets. Spread the florets into 1 layer and cook, without stirring, until the undersides are lightly browned, 3 to 4 minutes. Flip each piece over and continue cooking, undisturbed, until evenly browned, 3 to 4 minutes. Repeat until all sides are evenly browned, 3 to 5 minutes more.

Add the remaining 1 Tbs. olive oil, the shallot, red pepper flakes and paprika to the pan. Cook, stirring occasionally, until the shallot is softened, 2 to 3 minutes. Add the honey and water and sauté until the liquid reduces to a glaze, 2 to 3 minutes. Squeeze the juice from the lemon half over the cauliflower, stir to combine and cook for 30 seconds. Remove from the heat. Taste and adjust the seasonings with salt and black pepper.

Transfer the cauliflower to a warmed bowl and serve immediately. Serves 4.

Although cauliflower is a fav veg in our home and we've cooked and served it gazillions (I'm sure that is right) of ways over the years with hundreds of options still remaining to try this was one we are glad we did but the recipe won't make the repeat file. For me that is largely because it takes a pretty darned big skillet to get this all on one layer and then the individual flipping of florets / pieces means I'm now a lazy enough cook after umpteen decades in the kitchen to not to want to have to wrangle the huge skillet for clean up. But, as they say and I say to the recipe, "it's not you, it's me". Because the smoky - sweet - salty flavors of the lightly caramelized cauliflower are good ones.

Rated 5 out of 5 by from Even my sons flipped for this cauliflower Shockingly good. I actually called my sons (22 and 17) to come and taste it, interrupting a game they were playing. It was so delicious that we kept picking at it until it was gone before we even sat down to dinner. It's smoky-sweet, complex and delicious, my new "there is no substitute" cauliflower recipe.

I tossed in some pasta and a sprinkle of fresh chopped parsley and it was a lovely side to some chicken breasts cooked with a touch of sherry. With the pasta it would also be a perfect meatless meal.

Delicious and a little unusual as it is a little spicy, a little sweet from the honey, and tangy from the lemon juice added at the end. Will definitely make this again and will also share this recipe with a vegetarian girlfriend.

I wouldn't normally cook cauliflower for a dinner party, but I can't wait to make this for my guests. The sweet and sour, with a bit of a kick from the red pepper flakes, is a wonderful surprise on your palate.

Rated 5 out of 5 by from Wonderful! I've been looking for new recipes for boring cauliflower and this fits the bill. It was delicious..spicy and sweet. Next time i think i'll roast the cauliflower in the oven and then chop into florets. That would be a bit less work than standing at the stove watching and flipping every few min. Otherwise my mom and i both loved it!
