These ruby-hued steaks are hand-cut from wild yellowfin tuna that meet the highest standards of Maine’s Browne Trading Company inspectors, who select each fish by looking at a thin core of its meat using a Japanese instrument called a sashibo. They ensure that each fish has the right color, fat content and texture—and that it is #1 sushi grade. Flavorful and meaty, the fish is wonderful lightly seared in a pan or on the grill as well as raw, in sushi and tartare.

- The yellowfin tuna steaks are shipped fresh with ice packs. Upon receipt, refrigerate the fish, or freeze to serve at a later date.
- To freeze, remove the fish from its original packaging and store in an airtight freezer bag. (Remove as much air as possible from th bag to prevent freezer burn.) It will keep refrigerated up to 4 days, or frozen up to 3 months.
- Remove the wrapped fish from the freezer and let thaw in the refrigerator overnight. Place the frozen package on a plate or tray to catch juices that accumulate during thawing.
