- Always use caution when handling sharp objects.
- Avoid cutting on hard surfaces such as stone, metal or glass.
- It is not advisable to use any knife but a meat cleaver to cut through bone, as other blades can be easily damaged.
- Hand-wash with warm water and a mild detergent. Rinse and dry immediately.
- Maintain the knife's cutting edge by regularly using a honing steel.
- Sharpen as needed. With regular use and honing, you should not need to sharpen your knife more than once or twice a year.
- Sharpen knife at home using a whetstone or knife sharpener, or have it sharpened by a professional.
- Store knife in a safe place to protect its edge and prevent injury.

Orders reciived by 9:00 p.m., Eastern time, Monday through Thursday will arrive the next business day; orders placed Friday thorugh Sunday will arrive on the following Tuesday.
If within 30 days, you are dissatisfied for any reason, you may return your purchase for a refund of the merchandise value. An original receipt or gift receipt is required for all returns and exchanges. Returns with a gift receipt will be refunded in the form of a Merchandise Credit for the amount indicated on the gift receipt. Returns with original receipt will be refunded in the original form of payment, cash and check refunds over $100 will be issued as a company check (may take 14 business days from time of request).

I chose to buy her a Wusthof because that company has long been my favorite knife maker. Their knives are consistently sharp, well balanced and easy to maintain. Having been cooking for a long time and already owning enough knives to outfit a pirate ship, I probably didn't need another knive myself, but influenced by my niece's pleasure with the Nakiri, I bought one for our kitchen too. It has now become a "go to" knife in this house. It cuts as easily and well as an expensive Japanese knife that I have, but it feels so much less fragile than that knife. It glides through vegetables and feels secure in the hand. I prefer it over my Wusthof Santoku because the squared edge tip is surprisingly maneuverable to make a quick trim as you go about slicing. I use it almost every day, to chop a ridiculous amount of produce that ranges in size and starch. As someone that eats a mostly vegetarian diet, I've gotten many hours of use out this knife. I use it on peppers, tomatoes, garlic, shallots, scallions, red onions, ginger, mushrooms, avocados, zucchini, potatoes and other root vegetables, and a variety of fruit. It's been a pleasure to use, and chops through nearly anything with ease. I also have the Shun Fuji Santoku and Chef knives, but this one sees the most use, as the price isn't nearly as intimidating to an amateur cook.
