Red Chile Mango: We start by pairing ripe Magdalena mangoes with a medley of red chilies, including ancho, New Mexico and morita. They’re simmered with chunks of flame-roasted yellow peppers, tomatillos and onions, highlighted by a splash of tangy lime—plus blue agave nectar for a hint of delicate sweetness.
Roasted Tomato: We roast our ingredients over an open flame, pairing sweet, ripe tomatoes with smoky Anaheim and poblano chilies. To deepen their rich flavors, the chunks of roasted tomatoes and green chilies are slow-simmered with tangy key lime, garlic and herbs.
Corn, Serrano & Cactus: We bring on the spice with a trio of green chili peppers, including fiery serrano, bold jalapeño and mellow poblano. The chilies are simmered with flame-roasted corn, tomatoes and onions—plus chunks of pickled cactus. Garlic, lime and cilantro round out the blend with lively character.
