We worked with a third-generation professional baker to develop the ultimate flour for making cakes, pastries and cookies. Millers grind soft wheat at high speed to preserve the delicate starches that ensure light, tender results. The premium organic wheat for our flour is grown and harvested with care on the White Pine and Wegner family farms in southern Idaho. To ensure the ideal texture, the grains are custom-milled for us at a historic water-powered mill, originally founded as a Utah farmers’ co-op in 1867.
