Skirt steak is a satisfying cut of beef that stands up well to spice rubs or a slathering of BBQ sauce. But this Kobe-style skirt from Oregon-based Yamaya needs nothing more than a sprinkle of salt and pepper to make a fantastic family dinner. Highly marbled with unsaturated fat, which melts at a lower temperature than saturated fat, it's uncommonly tender, juicy and flavorful.
- Kobe-style beef, raised in Oregon, using Japanese methods and an all-natural grain diet.
- Washugyu® are a crossbred of the famous Japanese Black Wagyu and the finest American Black Angus.
- Hormone-, antibiotic- and GMO-free.
- Longer raising and feeding time (up to 30 months) creates beef marbled with more unsaturated fat.
- These well-marbled cuts are good for all types of cooking methods, but the unsaturated fat in the meat makes it ideal for searing and roasting, which allow the meat to baste in the flavorful rendered fat.
- Good to marinate or it can be simply sprinkled with a little salt and pepper.
- Traditional for fajitas, skirt steak is also great on salads or sandwiches.

Receiving Instructions
The steak is shipped fresh with ice packs. Upon receipt place the steak in the refrigerator. The steak keeps refrigerated, up to 5 days, unopened. For optimal flavor and texture we do not recommend freezing.
