  • Taken from the short loin, between the ribeye and the filet, the New York steak (or strip steak) offers a middle ground in marbling, while still being a tender, highly flavorful cut. These Kobe-style steaks, from Oregon-based Yamaya, have a higher percentage of unsaturated fat, which melts at a lower temperature to give the meat a buttery texture and rich, full beef taste.

  • Receiving Instructions

    The steaks are shipped fresh with ice packs. Upon receipt place the steaks in the refrigerator. The steaks keep refrigerated, up to 5 days, unopened. For optimal flavor and texture we do not recommend freezing.

About Yamaya

Using intensive Japanese breeding and feeding techniques, Yamaya produces Kobe-style beef from Washugyu cattle raised on the cool, green pastures of Oregon. The cattle—a cross between Japanese Wagyu and American Black Angus—are fed an all-natural diet of grains and grasses, free of hormones and antibiotics, for up to 30 months. The longer feeding time results in well-marbled beef with a high percentage of healthy unsaturated fat, a melt-in-your-mouth texture, and rich, beefy favor.

Serving Suggestions

  • These Kobe-style New Yorks are so flavorful and juicy, they need only a sprinkle of salt and pepper and they're ready to hit the grill.
  • Grill and serve topped with Roquefort butter.
  • Extra marbling makes these steaks a good substitute for rib-eye.
