- Cornish Hens au Poivre
To make the spiced peppercorns, in a bowl, stir together the peppercorns, red pepper flakes, allspice and juniper berries. Transfer to a pepper mill or spice grinder and grind coarsely. Set aside.
At least 1 hour or up to 24 hours before roasting, rinse the hens and pat dry with paper towels. Using a sharp, heavy knife or kitchen shears, split each hen in half down the back and the breastbone. Tuck the leg into the skin, pushing it up to meet the breastbone, and fold back the wing of each hen half. Using the flat side of a cleaver, pound the skin side of each half to flatten the meat and facilitate even cooking. In a small bowl, combine the spiced peppercorns and the salt, and generously rub the entire surface of the hen halves with the mixture. Place the hen halves, skin side up, in a shallow roasting pan large enough to hold them in a single layer. Let stand, uncovered, for 1 hour at room temperature or covered for up to 24 hours in the refrigerator. If refrigerated, bring hens to room temperature before roasting.
Preheat an oven to 425°F.
Arrange the hen halves, skin side down, in the pan. Drizzle about 1/4 tsp. of the olive oil and 1/4 tsp. of the lemon juice over each half. Roast until the meat begins to brown, about 12 minutes. Turn over the birds and baste with the remaining oil and lemon juice. Continue to roast until the skin is crisp and browned and the juices run clear when the meat is pierced at the thickest point with a fork, or until an instant-read thermometer inserted into the thickest part of the thigh, away from the bone, registers 165° to 170°F, 25 to 30 minutes more. Transfer the hens to a warmed platter and let rest for 5 to 10 minutes before serving.
While the hens are resting, spoon off the fat from the pan juices. Strain the pan juices through a fine-mesh sieve into a warmed bowl and keep warm.

I've even had the motor replace by Vitamix but it finally died. I purchased the S50 Personal Blender for my daughter who will being going off to college and drinks smoothies everyday. From what I can tell this model simply doesn't have enough power and definitely isn't worth the expense. She is now asking me for a "cheap blender" because she is so frustrated that this doesn't have the power to mix up a smoothie. I'm talking about frozen fruit, apple juice and ice. It really does grind up frozen fruits with ease. I do not find washing it too difficult. After I blend I run it with some dish soap and then use a dishcloth. There's a hole in the back for the leaks to run out all over the back of the base. The hole is difficult to clean unless you have a baby bottle brush. The unit vibrates around on the counter causing it to travel several inches almost landing in my sink. Ingredients stick to the bowl & require scraping during blending. The to-go-container's lid is difficult to pop open as well as clean. It's difficult to unscrew the blades section from the bottom of the regular bowl.
