Pickling is all in the family for Jesse and Katie Hancock, founders of Unbound Pickling. The Portland, Oregon, couple prepares unique signature varieties in their own kitchen, using recipes they create together and the freshest seasonal ingredients sourced from the nearby Willamette Valley and around the Pacific Northwest. Crunchy and more savory than traditional bread-and-butter pickles, their version is prepared with a small amount of cane sugar, for a sophisticated twist on the classic flavor. The pickles are made in small batches and hand packed with thinly sliced onions, fresh blueberries and dried pears, which add a touch of natural sweetness. Perfect on sandwiches and cheeseburgers, the pickles are also delicious chopped and mixed into tuna or chicken salad—or simply straight from the jar.
