Our caviars and roes are from Tsar Nicoulai, a Northern California producer renowned for environmentally friendly aquaculture. The distinguished Select California Estate Osetra caviar, available in two sizes, is harvested from sustainably farmed Northern California white sturgeon raised in filtered artesian well water and fed a completely natural diet. As a result of this stringent process, the harvested caviar is consistently of the highest quality and freshness. This superb full-size osetra-grade caviar has a platinum-gray sheen, and a mild brine highlights its creamy, delicate texture, buttery taste and clean, fresh finish.
