White truffles are a delicacy of the Piedmont region of northern Italy, where the rare and prized mushrooms are traditionally enjoyed with tagliatelle pasta. This tagliatelle re-creates this superb taste experience with white truffles blended right into the dough. Prepared in Italy, the ribbons of pasta are hand cut from bright yellow dough made with local farm-fresh eggs, flour and Italian white truffles. The dough is drawn through a bronze die to create a rugged, porous quality (ideal for holding sauces) then air-dried for 24 hours. This truffle-rich pasta is wonderful with just a simple sauce of butter and Parmesan.
