This beautiful salt starts as snowmelt from the Australian Alps that descents to the Murray Darling basin, where a combination of low rainfall and high evaporation have created high concentrations of salt in the groundwater. Carotene-rich algae in the underground brine lend a peachy-pink hue, and an amazingly light cotton candy–like texture. In fact, the flakes have a hint of sweetness to them. Reserve this special salt for use at the table, to be sprinkled over a dish just before eating.
