Just a sprinkle of our finishing salts from The Meadows, an artisanal food purveyor in Portland, Oregon, can radically enhance and balance the flavors of foods and bring out subtle sweet and savory nuances. This pinkish-grey volcanic salt from Darjeeling, India, has a medium-coarse grain and a strong, sulfuric flavor. Although this flavor dissipates with cooking, the salt can enhance foods with natural sulfuric flavors, like eggs. In India, a pinch of Kala Namak on a slice of fresh ginger is commonly eaten as an appetizer to aid digestion. Lower in sodium than many natural salts, the salt is delicious dusted on snacks, particularly fried foods.
