This unique version of the famous French tarte Tatin uses luscious pears in place of apples for a spectacular presentation and taste experience. Bosc pears are gently poached, artfully arranged in a circular pattern on a bed of house-made caramel, swirled over a buttery-rich pastry crust. The pears caramelize during baking, developing a silken, creamy texture and mellow, sweetly fruity flavor. Enjoy it warm with a scoop of vanilla ice cream. Boston’s Tatte Bakery, led by pastry chef Tzurit Or, created this upside-down tart just for us.
