Cut from both the fillet and the New York strip, our tender milk-fed veal loin chops are hand selected and cut to order for us by Strassburger, a 150-year-old family-owned New York butcher that supplies some of the country’s top steakhouses and restaurants. Strassburger sources the USDA Prime meat from animals raised in healthy environments by family farmers. The chops have a velvety texture and delicate, sweet flavor that are complemented best by grilling or broiling.

Receiving Instructions
- The veal chops ship frozen with ice packs. Upon receipt, place the steaks in the refrigerator or freezer for a later date. The chops will keep refrigerated up to 3 days unopened and up to 3 months frozen.
Proper thawing technique
- Remove the meat from the freezer and thaw in the refrigerator overnight. To retain more of the natural juices, leave the meat in its original packaging while thawing. It is normal for natural juices to accumulate. Simply pat dry with paper towels before cooking.
