- Ideal for use on any cooktop, including induction.
- Oven and broiler safe up to 500°F.
- For best results use low to medium heat.
- When using high heat, bring pans slowly to a high temperature.
- Use plastic, wood or nylon utensils only; metal utensils may damage the enamel.
- Enamel may chip or crack if banged against a hard surface.
- Handles and knobs can become very hot. Always use pot holder or glove when handling.
- Allow pan to cool before washing.
- Dishwasher safe.
- Stubborn stains can be removed by soaking your pot for a few minutes in hot soapy water.
- Completely dry pan before storing.
- Avoid using steel wool, steel scouring pads, harsh detergents, bleach or abrasive cleaners.

Staub traces its origin to the Alsace region of France, where founder Francis Staub designed his first enameled pot while working in an old French artillery factory in 1974. With the goal of creating the perfect pot for cooking the region’s traditional hearty soups, stews and braises, he combined cast iron, the most popular material of the time, with the latest enameling technology available. Today, Staub still makes its cookware at a traditional atelier in France, casting each pot in an individual sand mold, which is heated to 800°F and destroyed after use. The exterior enamel coating is made with glass powder and mineral pigments, applied in two or three coats to generate brilliant glossy colors.

Do you put this in a cold oven with or without the chicken on it? Do you put it in the oven after its been preheated? I keep finding conflicting information online. After I got over being annoyed, I decided to put the bird on there at a preheated 375 oven and just go for it, of course praying I don't crack it. It was so moist and juicy and very flavorful. I find that this cooked the chicken to perfection because of the cast iron spike being inside. OMG I can not tell you how amazing the chicken came out. I cant wait to try a duck!! If you love good food GET THIS PAN! After eating that delicious meal last night I decided to forgive Staub and email customer service for some concrete instructions! LOL.... I just cooked on this Staub vertical roaster a chicken that was so moist, so beautiful, so aromatic...I told my husband I will cook one a week as it was just....perfect! Breast meat so juicy and full of flavor! Cleanup was simple and quick! I used the recipe in the instruction booklet and had a 5 pound chicken that had more than enough room in the roaster. Plenty of room for any juices to be contained too. Be sure to rub the inside of the bird with herbs and lemon juice and you will have a real treat! No sticking at all on the pan. I love all my Staub! I got the grey shade, as it matches several other grey Staub pieces I have. Highly recommend! This item promotes even browning and faster cooking. I love the quality of Staub and have used it to equip my kitchen with no regrets. I love the little spouts to pour off juices for gravy or au jus. It was a cinch to clean- as all Staub enamled cast iron items. This is a huge upgrade from my cooling rack in the sheet pan method- the cooling rack is IMPOSSIBLE to clean. Love this. This roaster makes the best chicken I've ever had. I just use olive oil, inside and out, and loads of lemon -pepper. 450 degrees for 15 minutes and then turn down the oven to 350 degrees. cook about 15 minutes per pound. Oh my....it is delicious. The pan cleans up easily too. We have roast chicken almost every week now. I used this for the first time tonight and absolutely loved the pan. I roasted at 425 for 1 hour. Used truffle salt and pepper on the outside and inside of bird. Stuffed with half a lemon. The flavor was amazing. Skin was crispy and the meat was tender. I put the bird on upside down following the pictures in Staubs recipe. I can see myself roasting a chicken at least once a week. I don't roast a lot of chickens, but thought I would give this roaster a try (WS stands behind everything it sells and I knew I could return it if I didn't like it). I've used it twice, and it turned out a perfectly roasted chicken each time. I picked a very basic Thomas Keller recipe, calling only for salt and pepper, and at the end, some thyme. I trussed the chicken (just over 4#), roasted it at 450 degrees for just over an hour, let it rest for 15 minutes, and it was done to perfection--crisp skin, very flavorful, both white and dark meat done and moist. Fits perfectly in the oven on the lower middle shelf. No problems with cleanup.
