This press is the key to preparing one of Italy's traditional grilled dishes, chicken under a brick (pollo al mattone). The heavy press holds the bird flat against the grill, so it cooks faster and more evenly, emerging with skin that is invitingly crisp. The tool is also great for weighting down pork chops and tenderloins (this prevents their edges from curling). Or use it to hold down bacon in a fry pan on the stovetop.
