This recipe calls for preparing the guacamole in a molcajete, a mortar and pestle carved from volcanic rock. One of the world's oldest kitchen tools, it was used by the Aztecs in Mexico for grinding corn into flour.

The mortar and pestle carved from volcanic rock is among the world's oldest kitchen tools. Today, you'll find a mortar and pestle handy for blending guacamole and crushing whole spices. If lined with lettuce leaves, the mortar can double as a serving dish for salsas and dips. Ours is hand carved in Mexico from a single piece of basalt rock, making each piece unique. Mortar, 8" diam., 4 1/4" high; pestle, 3 1/2" long. Hand-wash.
