- Use & Care
- Board should be seasoned with a food-grade mineral oil before first use.
- To season the board properly, warm the mineral oil slightly and apply it in the direction of the wood grain using a clean, dry cloth. Allow the oil to soak in and repeat with another application. Allow the board to dry and wipe off any excess oil.
- Hand-wash with hot, soapy water. Dry thoroughly.
- Do not soak or submerge board in water.
- Occasionally rub with a food-safe mineral oil to keep wood from drying out.
- To sanitize, wash the board with a solution of one part vinegar to five parts water.
- Remove odors by rubbing the board with kosher or table salt and half a lemon. Let sit for 2 to 3 minutes then wipe clean with a damp cloth. Remove excess moisture with a clean paper towel and stand the board on end to air dry.
- Store in a dry area away from extreme temperatures.

Orders received by 9:00 p.m., Eastern time, Monday through Thursday will arrive the next business day; orders placed Friday through Sunday will arrive on the following Tuesday.

The first time we used it to cut a lemon it had a yellow stain that could not be scrubbed out. Then we cut green onions and now have green stains. We have had this cutting board for about a month and it is already warped and rocks on the counter. So between the excessive staining,and the warping, we definitely would not recommend this cutting board. There is something about the wood used to make this cutting board that makes cutting and chopping more enjoyable. It is very lightweight but it does not slide around on the quartz countertop. The wood is softer and forgiving and you can just tell that the knife blade is not getting dulled. It kind of slides across the grain of the wood yet slicing and dicing is stabilized. I have used an Epicurean board for a very long time (years) but this Shun board is just more 'tactile' and well, you just have to use it to understand what I a saying. I only wish I had purchased the medium size. The soft hinoki wood helps protect the edge of the hard steels used in Japanese knives to help avoid dulling and blade chipping That is the main reason to choose a hinoki board over other, less expensive options. I followed the Use and Care instructions and treated the board before use with some cutting board oil. In addition to protecting the board, it also brought out the beauty of the wood. I use this board with my Shun Classic and Premier knives, using their recommended push cutting motion. No issues with splintering so far, and the blade edges are holding up well. The board is much lighter than other types of wood cutting boards which makes it convenient for use. I bought the Medium board which a a convenient size, but I would recommend the large if you have a lot of prep to do.Date published: 2016-02-04Rated 3 out of 5 by TeeLK from Soft (good) Splinters (bad) I bought this board because I thought it would help to preserve the sharpness and longevity of my Shun chef's knife -- and it may well do that -- but I noticed that the board is so soft that it splinters.
