I love how heavy it is and the pointy side works like a charm without having to beat the chicken to a pulp. My favorite aspect of it is that I can take it apart and completely sanitize it in the dishwasher at 140 degrees. It's clean as a whistle and ready to go for my next dish. I use this tool at least once a week. It has enhanced my cooking repertoire so much that I really would not want to cook without it anymore. It does a great job of both pounding and tenderizing. I often use a piece of waxed paper both under and on top of the chicken breast when I am using the pounding side of the tool, and it doesn't shred the waxed paper a bit. The tenderizer side is more easily controlled than my old L mallet-style tool was--not to mention that it is dishwasher safe, unlike my old mallet. I store it with the handle and the disc separated, so it takes up very little space in my drawer. There really isn't anything I don't like about this product (except that I worry that I will lose track of the plastic ring that fits into the handle). My partner and I both love using it. The handle is very ergonomic too. The reversible spikes definitely add functionality and let you mix things up depending on what you're pounding. It is as fabulous as I'd hoped. A quality product, works so easily to pound chicken breast. I made the best Chicken Parmesan with it, it was noticeable to the family. The chicken was tender and evenly thin. I used wax paper for pounding it and it was easy clean up. I have not used the tenderizing side yet, but it should still be easy to clean. Itt has the sharpest teeth of any pounder I have seen - I have the Rosle mallet-style and two old school wooden type; the latter work great on tender things like meat, fish (yes). Thie tenderizer on this one reigns on tougher, more fibrous cuts of lamb, turkey. Using a Pepin recipe, I pound cuts of lamb thin for shashlik and similar prep; turkey for piccata ans marsala prep, for roll-ups ...it really helps break down those fibers for tender results. As others noted, it is also good for working with garlic, nuts, and crushing graham crackers (instead of using rolling pin), etc. All good! Recommend!Date published: 2015-12-21
