- Quinoa Dried Cranberries and Toasted Pecans
Preheat an oven to 350°F. Spread the pecans in a small baking pan, place in the oven and toast until they are fragrant and have taken on color, about 15 minutes. Pour onto a plate and let cool.
Meanwhile, in a large, deep fry pan over medium-high heat, warm the olive oil until a quinoa seed dropped into it sizzles upon contact. Add the quinoa and cook, stirring, until the seeds are separate and golden, about 5 minutes. Add the garlic and cook for 1 minute until fragrant. Add the water and salt. Bring to a boil, reduce the heat to medium, cover and cook until the liquid is absorbed, 15 to 18 minutes. Uncover and continue to cook until any excess moisture is cooked off, about 1 minute.
Spoon the quinoa into a warmed serving dish. Top with the toasted pecans and cranberries, and serve. Serves 4.
Quinoa with Pine Nuts and Broccoli Omit the pecans and substitute 2 Tbs. pine nuts, lightly toasted in a small, dry fry pan over low heat for about 3 minutes. Gently stir 2 cups chopped steamed broccoli florets into the quinoa during the last 1 minute of cooking.

While it looks nice, the one I got had two problems: the bread did not stay down when I pushed the lever, and when I finally did get it to stay down, the device wouldn't even start to heat up when I pushed any of the buttons. Obviously the device I got was seriously defective. While W-S offered to replace it, I asked for and got a refund instead. Why? I have to stay it didn't feel any more robust than my old $75 toaster. The lever and mechanism to lower the bread, for instance, just felt cheap. I had hoped to get a more even brown, but given the apparent poor quality of the one I got, and the huge price difference, I'll never know. Can stop toasting before it burns. Fascinating to watch the bread toast. I've used the frozen setting for my Ezekiel bread, bagel setting for bagels and regular setting for white bread. All settings work perfect with even browning. I clean it like the manual instructs. It's pricey but a splurge without me having any buyers remorse. I use it daily. I leave out on my countertop. I love the simplicity of the design, the straight-forward controls, how solid and well-built it is, that it is quite striking in its appearance, and -- IT MAKES GREAT TOAST! I'd almost given up on a good toaster. I recall the old polished mirror-finish ToastMaster my mother had that was used regularly for about 40 years. The thing just worked and consistently made good toast. The Vision Toaster is of that caliber. The design is well thought-out. I like that the function controls are on the FRONT of the unit (as well as the Cancel button). I especially like being able to monitor the progress of toasting. I also like the accessibility in order to clean it. Ingeniously simple. The Vision toaster is made the way countertop appliances used to be made: solid and serviceable. I bought last year ago to replace a dying KitchenAid toaster. The manufacturer suggests a "break-in" of setting it on the highest setting before you use it. Even so it's slow to toast. The reason I rate it so highly is its versatility and looks. It toasts thick slabs or thin, one-side alone, frozen items without drying them out, or does a quick reheat. It does an incredibly even job, leaving most slices without any lines. The ability to see it toasting is both useful and fun. It has a tray that slides out for easy crumb removal. Both front and back glass doors swing open for clean up of the innermost panel. However the two sheets of glass in each panel are fixed in place, so don't drop anything between them. I have been on the search for a good toaster for years. I have owned the Dualit...and cuisinart...and capresso, (which does not even make toasters any longer) .. Did not want Breville ..as i have not had great experiences with the brand..owned the blender and when it broke..the customer service was awful..so no more breville products.... All products have been sub par! and always disappointed!! BUt now i own this product and i am so impressed. America Test Kitchen recommended...and they are right... We unpacked it and put it to work quickly to achieve our “perfect toast.” As we experimented with this unit it become increasingly apparent that our goal was simply not attainable with this unit. Items were either "warmed" or "crucified" with no in-between. Additionally, the unit required a "rest period” between functions. We made the determination that something was awry with THIS unit and packed it up to return to another area store. The staff affirmed that our experience was not normal and that this unit would go right back Robot-Coupe. Lucky for us they had an in-store replacement.This replacement unit works as expected and we have no regrets. Everyone in the household now has the ability to achieve his/her "perfect toast." All the descriptions of the Vision Toaster tout the see through property. More emphasis should be given to the fact that it is a superb device, and would be so even if the sides were opaque. It toasts beautifully and evenly, taking a bit more time than other toasters. It's worth the wait. My only nit to pick is the instruction leaflet. It could be a bit more detailed. I received this toaster as a gift and absolutely love it. The design is definitely eye-catching and a conversation piece when people come over. It's especially convenient for toasting frozen bread - the defrost function makes this easy. We eat a lot of sourdough loaves that come cooked in a wide round shape and the wide slots are helpful to ensure that all sizes of bread fit.Date published: 2013-10-09
