Known by many names—loup de mer in France, branzino in Italy and lubina in Spain—the firm, finely textured flesh of sea bass is sweet and mild. It's a great match with olives, saffron and lemon in Middle Eastern recipes, thyme and tomatoes in Italian dishes, and white wine, garlic, scallions and ginger when steamed Asian-style. Our sea bass is farmed on Spain’s Veta la Palma estate, which is committed to using sustainable methods.

Receiving Instructions
- The Loup De Mer Sea Bass is shipped fresh with ice packs. Upon receipt, refrigerate the fish, or freeze to serve at a later date.
- To freeze, remove the fish from its original packaging and store in an airtight freezer bag. (Remove as much air as possible from th bag to prevent freezer burn.) It will keep refrigerated up to 4 days, or frozen up to 3 months.
Preparation
- Remove the wrapped fish from the freezer and let thaw in the refrigerator overnight. Place the frozen package on a plate or tray to catch juices that accumulate during thawing.
